  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped

  • 1 medium potato diced
  • 1 can 14 ounces diced tomatoes
  • 6 cups chicken broth or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked white beans
  • 2 cups fresh spinach
  • ¼ cup grated Parmesan cheese for serving

Instructions
 

Prepare the Vegetables

  • Wash all vegetables carefully. Peel the carrots and potato. Dice the onion, zucchini and potato. Slice the carrots and chop the celery into small pieces.

Sauté the Aromatics

  • Heat olive oil in a large soup pot. Add onion, carrots, and celery. Cook for about five minutes until softened. Stir often to prevent sticking.

Add Garlic

  • Add minced garlic to the pot. Stir continuously for one minute. This step releases the garlic aroma and creates a flavorful base.

Add Remaining Vegetables

  • Add diced zucchini and potato. Stir everything together. Cook for three minutes so the vegetables begin developing flavor before adding liquids.

Pour in Broth

  • Reduce heat to low. Cover partially and simmer for twenty-five minutes. The vegetables should become tender while the broth develops rich flavor.

Add Beans and Spinach

  • Stir in the cooked beans and fresh spinach. Cook for five more minutes. The spinach will wilt and blend perfectly into the soup.

Taste and Adjust

  • Taste the soup carefully. Add more salt or pepper if needed. Adjusting seasonings at the end improves the overall flavor balance.
