Ingredients
  

  • 2 cups butter lettuce
  • 2 cups romaine lettuce
  • 2 cups baby spinach
  • 1 cup arugula
  • 1 tablespoon chopped chives
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped tarragon
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions
 

Wash and Dry the Greens

  • Rinse all the greens in cold water. Dry them well with paper towels or a salad spinner. The dressing will stick better to dry leaves.

Make the Dressing

  • In a small bowl, mix lemon juice, Dijon mustard, olive oil, salt, and pepper. Whisk until smooth. Taste and adjust if you like.

Mix the Greens

  • Put all the greens and herbs in a big salad bowl. Toss them gently with tongs or hands.

Add the Dressing

  • Pour the dressing over the greens. Mix gently so all leaves get a light coat. Be soft to keep the greens fresh.

Serve Fresh

  • Serve right away. You can add extra herbs or a little sea salt on top for taste.

Notes

  • Always use fresh greens. Old greens taste bitter.
  • Dry the leaves well before mixing.
  • Add dressing just before serving.
  • Use good olive oil for better flavor.
  • Add a few drops of honey if you like sweet dressing.
