Ingredients
  

  • 1 pound ground beef
  • 1 onion chopped
  • 2 garlic cloves minced
  • 3 medium potatoes diced
  • 1 can diced tomatoes 14 oz
  • 1 can corn drained
  • 1 can pinto beans drained
  • 1 can kidney beans drained
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

Cook the Ground Beef

  • Heat olive oil in a big pot on medium heat. Add ground beef. Cook until brown. Break it into small pieces with a spoon. Remove extra fat if needed.

Add Onion and Garlic

  • Add chopped onion and garlic. Stir and cook for 2 minutes. This gives a nice smell and taste.

Add Potatoes and Spices

  • Add diced potatoes, chili powder, cumin, salt, and pepper. Stir well so everything mixes nicely. The spices give that cowboy-style flavor.

Add Tomatoes and Broth

  • Add diced tomatoes with juice and beef broth. Mix well. Let it simmer for 10 minutes. The potatoes will start to soften.

Add Beans and Corn

  • Now add pinto beans, kidney beans, and corn. Stir again. Let it cook for 20 more minutes. The soup will get thicker and richer.

Check and Serve
