The Pioneer Woman Cowboy Quiche Recipe is hearty, cheesy and full of flavor. It’s perfect for breakfast, brunch or lunch. This quiche is easy to make at home.

Ingredients
  

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon chopped
  • 1 small onion diced
  • 1 small bell pepper diced
  • 1 cup fresh spinach chopped
  • 1 pre-made pie crust
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preheat the Oven

  • Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish. Set aside.

Cook Bacon and Veggies

  • In a frying pan, cook bacon until crisp. Remove and chop. Sauté onion and bell pepper until soft.

Prepare the Filling

  • In a mixing bowl, whisk eggs and milk together. Add salt, pepper and half the cheese.

Add Veggies and Bacon

  • Stir cooked bacon, onion, bell pepper and spinach into the egg mixture until evenly combined.

Fill the Pie Crust

  • Pour the filling into the prepared pie crust. Spread it evenly with a spatula.

Top with Cheese

  • Sprinkle the remaining cheddar cheese over the top of the quiche for a golden finish.

Bake the Quiche

  • Place quiche in the oven. Bake for 30–35 minutes until the filling is set and slightly golden.

Cool Before Serving

  • Let quiche cool for 5–10 minutes before slicing. This helps the filling hold together.

Slice and Serve

  • Cut into 6 slices. Serve warm or at room temperature with your favorite sides.
