Ingredients
  

  • Spaghetti – 8 oz
  • Eggs – 2 large
  • Parmesan cheese – 1 cup grated
  • White miso paste – 1 tbsp
  • Bacon or pancetta – 4 strips chopped
  • Black pepper – 1 tsp
  • Salt – as needed
  • Pasta water – ½ cup

Instructions
 

Cook the Pasta

  • Boil spaghetti until soft but firm. Save some pasta water for the sauce later.

Cook the Bacon

  • Fry bacon pieces until crispy and golden. Remove from heat and set aside.

Mix Eggs and Miso

  • Whisk eggs, miso paste and Parmesan until smooth and creamy with no lumps.

Add Pasta to Bacon Pan

  • Place cooked pasta in the bacon pan. Toss gently in the warm fat for flavor.

Add Egg Mixture

  • Pour egg mix over pasta. Stir fast to prevent clumping and keep sauce smooth.

Add Pasta Water

  • Pour warm pasta water slowly. Mix until sauce becomes silky and thick.

Add Pepper

  • Sprinkle black pepper for flavor. Toss again for even mixing.

Serve Warm

  • Plate the pasta at once. Keep it hot for the best creamy texture.
