Ingredients
  

  • 4 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 small onion chopped
  • 2 cups milk
  • 1 cup cream
  • 2 cups chicken or vegetable broth
  • Salt as needed
  • Pepper as needed
  • A pinch of nutmeg optional

Instructions
 

Melt the Butter

  • Put a large pot on medium heat. Add butter and let it melt. Add chopped onion and cook for 3 minutes until soft.

Make the Roux

  • Add flour to the pot. Stir it well for one minute. It will make a thick paste. This helps make your soup creamy.

Add the Liquids

  • Slowly pour in milk and whisk. Then add cream and broth. Stir well so there are no lumps. Let it cook for 5 minutes.

Add the Broccoli

  • Add the broccoli florets to the pot. Stir and cover it. Cook for 10 minutes until the broccoli is soft.

Blend the Soup

  • If you like smooth soup, blend it gently. If you like chunks, skip blending. Both taste great.

Add the Cheese

  • Turn the heat low. Add shredded cheddar cheese. Stir until it melts. Add salt, pepper, and nutmeg if you like.

Serve and Enjoy
