Ingredients

  • 4 medium potatoes
  • 3 boiled eggs
  • ½ cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 small onion finely chopped
  • 1 celery stalk finely chopped
  • 2 tbsp sweet pickle relish
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish

Instructions

Boil the Potatoes

  • Peel the potatoes and cut them into small cubes. Put them in cold water with a little salt. Boil for 15–20 minutes until soft. Drain the water and let them cool.

Boil the Eggs

  • Put eggs in a small pot and cover with water. Boil for 10 minutes. Cool the eggs under cold water. Peel and cut them into small pieces.

Mix the Dressing

  • In a bowl, add mayonnaise, mustard, and pickle relish. Mix well. Add salt and pepper. Taste and change if needed.

Combine Everything

  • In a large bowl, add potatoes, eggs, onion, and celery. Pour the dressing over them. Mix slowly so potatoes stay in pieces.

Chill the Salad

  • Put the salad in the fridge for one hour. This helps the taste mix well.

Serve and Enjoy

  • Before serving, sprinkle paprika on top. It gives nice color and taste. Enjoy your creamy Juan Pollo Potato Salad.

Notes

  • Don’t cook potatoes too long. They should be soft, not mushy.
  • Use real mayonnaise for better taste.
  • Chill before serving for more flavor.
  • Add a little vinegar if you like a tangy taste.
  • Use sweet relish for the true Juan Pollo flavor.
