Ingredients
  

  • 1 cup wild rice
  • 3 cups water
  • 1/2 teaspoon salt
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup chopped parsley
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts

For Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

Cook the Wild Rice

  • Rinse wild rice under cold water. Add it to a pot with water and salt. Bring to a boil, then simmer for 35–40 minutes until tender and slightly chewy.

Cool the Rice

  • Drain any extra water using a strainer. Spread the rice on a plate to cool faster. Let it cool completely before mixing with other ingredients.

Prepare Vegetables

  • Chop cucumber, tomatoes, onion and parsley. Keep pieces small and even. This helps every bite have balanced flavor and texture.

Make the Dressing

  • In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper. Mix until smooth and well combined. Taste and adjust seasoning if needed.

Combine Ingredients
