Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5 large eggs separated
  • 1 cup granulated sugar divided
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 can 12 oz evaporated milk
  • 1 can 14 oz sweetened condensed milk
  • 1/4 cup heavy cream
  • 1 cup heavy cream for topping
  • 2 tablespoons powdered sugar
  • Fresh berries or cinnamon optional for garnish

Instructions

Preheat the Oven

  • Set oven to 350°F (175°C). Grease the baking pan with butter. Lightly flour it.

Mix Dry Ingredients

  • Combine flour, baking powder, and salt in a bowl. Set aside.

Beat Egg Yolks

  • In a large bowl, beat egg yolks with 3/4 cup sugar. Beat until pale yellow.

Add Milk and Vanilla

  • Mix milk and vanilla with egg yolks. Stir until smooth.

Fold in Dry Ingredients

  • Gently fold flour mixture into wet ingredients. Mix until combined.

Beat Egg Whites

  • In another bowl, beat egg whites until soft peaks form. Add remaining 1/4 cup sugar gradually.

Combine Mixtures

  • Fold egg whites gently into the cake batter. Do not overmix.

Bake the Cake

  • Pour batter into prepared pan. Bake 30–35 minutes. Test with toothpick.

Cool the Cake

  • Let cake cool completely in the pan. Do not remove from pan yet.

Prepare Milk Mixture

  • Mix evaporated milk, sweetened condensed milk, and 1/4 cup heavy cream in a bowl.

Poke the Cake

  • Use a fork to poke holes all over the cake. This helps milk soak in.

Pour Milk Mixture

  • Slowly pour milk mixture over the cake. Let it absorb for 10–15 minutes.

Whip the Cream

  • Whip 1 cup heavy cream with powdered sugar until soft peaks form.

Spread Topping

  • Spread whipped cream evenly on the soaked cake.

Chill Before Serving

  • Cover and refrigerate at least 2 hours. Serve cold for best taste.

Notes

  • Use room-temperature eggs for a fluffier cake.
  • Gently fold egg whites to keep cake light.
  • Pour milk mixture slowly to avoid overflow.
  • Chill cake for at least 2 hours for full flavor.
  • Use a fork to make small, even holes in the cake.
