Ingredients
  

  • 6 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 chopped onion
  • 3 minced garlic cloves
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions
 

Prepare the Peppers

  • Cut the tops off the peppers and remove all the seeds so they are ready to fill.

Cook the Beef

  • Cook the beef in a skillet until it turns brown and has no pink pieces left.

Add the Onion

  • Add the chopped onion to the beef and cook until the onion becomes soft and smells sweet.

Add the Garlic

  • Add the garlic and cook for one minute so it mixes well with the beef and onion.

Add Tomatoes and Rice

  • Add tomatoes, cooked rice, basil, oregano, salt and pepper. Mix everything well.

Fill the Peppers

  • Spoon the beef filling into each pepper and press the mixture gently so it stays firm.

Prepare the Baking Dish

  • Place the filled peppers upright in a baking dish. Drizzle a little olive oil on top.

Bake with Foil

  • Cover the dish with foil and bake until the peppers are soft, tender and lightly sweet.

  • Remove the foil and add cheese on top of the peppers. Bake again until the cheese melts.

  • Let the peppers rest for a few minutes before serving so the flavors settle well.

Notes

  • Fresh peppers are preferable to use.
  • Roast the beef completely to give it a good taste.
  • You should not miss herbs since they bring brightness.

  • Bake using foil in order to make the peppers tender.
