Ingredients
  

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh thyme chopped

Instructions
 

Boil the Potatoes

  • Place potatoes in salted water. Boil until fork tender, about 20 minutes.

Preheat the Oven

  • Preheat oven to 425°F. Line baking sheet with parchment paper.

Drain the Potatoes

  • Drain potatoes well. Let steam dry for five minutes.

Place on Baking Sheet

  • Arrange potatoes on baking sheet with space between each potato.

Smash the Potatoes

  • Use masher or glass. Press gently until potatoes flatten slightly.

Season the Potatoes

  • Drizzle olive oil over potatoes. Sprinkle salt, pepper, garlic and herbs.

Bake Until Crispy

  • Bake for 40 minutes until edges are golden and crispy.

Cool Slightly

  • Remove from oven. Let rest five minutes before serving.

  • Use baby potatoes for best texture.
  • Let potatoes dry before smashing.
