Ingredients
  

For the Crust:

  • 1 ¼ cups all-purpose flour
  • ½ cup cold butter cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 1 –2 tbsp cold water

For the Filling:

  • ½ cup butter soft
  • ½ cup sugar
  • 1 cup almond flour
  • 2 eggs
  • 1 tsp vanilla extract

For the Pear Topping:

  • 3 ripe pears peeled and sliced
  • 1 tbsp lemon juice
  • 1 tbsp sugar

Instructions
 

Make the Crust

  • Mix flour, sugar, and butter. Add egg yolk and water. Form a smooth dough and press into the tart pan.

Chill the Crust

  • Place the tart pan in the fridge. Let the crust rest for 20 minutes before baking.

Bake the Crust

  • Bake the crust for 12 minutes at 350°F. Let it cool slightly before filling.

Prepare the Filling

  • Beat butter and sugar until creamy. Add eggs, almond flour and vanilla. Mix until smooth.

Spread the Filling

  • Pour the almond filling into the baked crust. Spread evenly with a spatula.

Prepare the Pears

  • Slice pears thinly. Toss gently with lemon juice and sugar to keep color fresh.

Arrange the Pears

  • Place pears on top of the filling. Make a fan or circle pattern for a pretty look.

Bake the Tart

  • Bake the tart for 40 minutes. The top should be golden and the filling set.

Cool the Tart

  • Let the tart rest before slicing. The filling becomes firmer as it cools.
