Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup cold unsalted butter cubed
  • 1 egg yolk
  • 1 tablespoon cold water
  • 8 ounces dark chocolate chopped
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

Make the Tart Crust

  • Mix flour and powdered sugar in a bowl. Add cold butter and rub until crumbly.

Add Egg Yolk

  • Add egg yolk and cold water. Mix gently until dough forms. Do not overmix.

Chill the Dough

  • Wrap dough in plastic wrap. Chill for at least thirty minutes in the fridge.

Roll the Dough

  • Roll dough on a lightly floured surface. Make it large enough for the tart pan.

Press into Tart Pan

  • Press dough into the tart pan. Trim the edges clean. Chill for ten minutes.

Blind Bake the Crust

  • Preheat oven to 350°F. Line crust with parchment and beans. Bake for fifteen minutes.

Remove Weights

  • Remove parchment and beans. Bake for five more minutes until golden.

Heat the Cream

  • Warm heavy cream in a saucepan. Do not let it boil, just warm.

Add Chocolate

  • Pour warm cream over chopped chocolate. Let sit for two minutes to melt.

Stir Until Smooth

  • Stir chocolate and cream until glossy and smooth. Add butter and vanilla.

Fill the Tart

  • Pour chocolate filling into the crust. Smooth the top with a spatula.

Chill to Set

  • Chill tart in the fridge for at least two hours. This helps it set perfectly.
