Ingredients
  

  • 4 cod fillets about 6 ounces each
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/4 cup Dijon mustard
  • 1/4 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves optional
  • Chopped parsley for garnish

Instructions
 

Season the cod fillets

  • Pat cod dry with paper towels. Sprinkle salt and black pepper on both sides for flavor.

Heat the skillet

  • Heat olive oil and butter in a large skillet over medium heat until butter melts and foams.

Cook the cod

  • Place fillets in skillet. Cook 3–4 minutes per side until golden and fish flakes easily with a fork.

Remove fish

  • Transfer cooked cod to a plate. Keep warm while you prepare the mustard sauce in the same pan.

Make the mustard sauce

  • In the skillet, whisk Dijon mustard, heavy cream, lemon juice and thyme if using until smooth and slightly thickened.

Combine sauce and fish

  • Pour sauce over cod fillets. Spoon a little sauce over each piece. Let it heat together 1–2 minutes.

Garnish before serving

  • Sprinkle chopped parsley on top for color. Serve immediately while fish and sauce are warm.
