Ingredients
  

  • 4 boneless chicken breasts
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • ½ cup fresh lemon juice
  • ½ cup chicken broth
  • ¼ cup capers drained
  • 2 tablespoons fresh parsley chopped

Instructions
 

Prepare the Chicken

  • Place chicken breasts between plastic wrap. Pound gently until even thickness for quick and even cooking.

Season and Flour

  • Mix flour, salt and pepper. Coat chicken lightly on both sides. Shake off extra flour.

Heat the Pan

  • Heat olive oil and two tablespoons butter in a skillet over medium heat until hot.

Cook the Chicken

  • Add chicken pieces carefully. Cook four minutes per side until golden and fully cooked.

Remove and Rest

  • Move cooked chicken to a plate. Cover loosely to keep warm.

Make the Sauce

  • Add lemon juice, broth and capers to the pan. Scrape brown bits gently.

Simmer the Sauce

  • Let sauce simmer for five minutes. It should reduce slightly and smell bright.

Finish with Butter

  • Add remaining butter. Stir until sauce becomes smooth and shiny.

Combine and Serve

  • Return chicken to pan. Spoon sauce over chicken. Sprinkle parsley before serving.
