  • Garlic powder – ½ teaspoon
  • Ricotta cheese – 1 cup
  • Lemon zest – 1 teaspoon
  • Lemon juice – 1 tablespoon
  • Fresh thyme or parsley – 1 tablespoon
  • Red pepper flakes – optional

Instructions
 

Preheat the Oven

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. This high heat helps the cauliflower become crispy and golden.

Slice the Cauliflower

  • Remove outer leaves from cauliflower. Cut it into thick slices. Try to keep slices even. This helps them cook evenly in the oven.

Season the Cauliflower

  • Place slices on the baking sheet. Drizzle olive oil evenly. Sprinkle salt, pepper, and garlic powder. Rub seasoning gently on both sides.

Roast Until Golden

  • Roast cauliflower for 25 minutes. Flip halfway through cooking. Edges should look brown and crispy. Centers should feel tender.

Prepare the Ricotta

  • While roasting, mix ricotta with lemon zest and lemon juice. Stir until smooth. This adds fresh and creamy flavor.

Assemble the Toast

  • Remove cauliflower from oven. Spread ricotta mixture on each slice. Do this while cauliflower is still warm.

Add Final Touches

  • Sprinkle fresh herbs on top. Add red pepper flakes if you like heat. Serve right away for best taste.
