Chocolate lava cake is my all-time favorite dessert. It is warm, soft and so rich. The best part is the gooey center that flows like hot chocolate. This Gordon Ramsay Chocolate Lava Cake Recipe makes that magic at home with very simple steps.

Ingredients
  

  • 1 cup dark chocolate
  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup flour
  • Pinch of salt
  • Butter for greasing
  • Cocoa powder for dusting

Instructions
 

Melt the Chocolate

  • Melt butter and chocolate in a bowl over hot water. Stir until smooth and shiny.

Whisk Eggs and Sugar

  • Beat eggs, yolks and sugar until the mix gets pale and fluffy.

Combine Chocolate Mix

  • Add melted chocolate to the egg mix. Stir until both blends become smooth.

Add Flour

  • Add flour and salt. Mix gently until you get a soft and thick batter.

Prepare Ramekins

  • Grease ramekins with butter. Dust with cocoa so cakes do not stick.

Fill the Ramekins

  • Pour batter into the ramekins. Fill them almost to the top.

Bake the Cakes

  • Bake at 425°F (220°C) for 12 minutes. Remove when edges are firm but center is soft.

Plate the Cakes

  • Let cakes rest one minute. Flip on a plate and lift the ramekins gently.

Serve Warm

  • Serve warm so the gooey chocolate flows when you cut into it.
