The Footprints Rasta Pasta Recipe is creamy, spicy and full of flavor. It comes from the famous Footprints Cafe in Brooklyn. This dish has soft chicken, colorful bell peppers and a creamy jerk sauce.

Ingredients
  

  • 10 oz penne pasta
  • 2 chicken breasts cut thin
  • 1 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup grated parmesan cheese
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 garlic cloves chopped
  • Salt to taste
  • Black pepper to taste
  • Green onions for garnish

Instructions
 

Cook the Pasta

  • Fill a pot with water and boil it. Add salt and pasta. Cook until soft but not too soft. Drain the pasta and set it aside.

Season the Chicken

  • Put sliced chicken in a bowl. Add jerk seasoning, salt, and pepper. Mix well so the chicken gets full flavor.

Cook the Chicken

  • Heat olive oil in a pan. Add the chicken and cook for about 7 minutes. Turn it often until it turns golden brown and cooked through. Take it out and keep aside.

Sauté the Vegetables

  • In the same pan, add a little more oil. Add bell peppers and garlic. Cook for 3–4 minutes until soft and bright.

Make the Cream Sauce

  • Lower the heat. Pour in the heavy cream and milk. Stir slowly. Add parmesan cheese and mix well. Cook until the sauce becomes creamy. Add a pinch of salt and pepper to taste.

Add Chicken and Pasta

  • Now add the cooked chicken and pasta to the sauce. Mix well so everything gets covered in creamy jerk sauce.

Garnish and Serve

  • Add chopped green onions on top. Serve hot and enjoy your creamy, colorful Footprints Rasta Pasta.

  • Adjust the jerk seasoning to match your spice level.
  • Use shrimp instead of chicken for a fun twist.
