Ingredients
  

  • 2 pounds chicken thighs or breasts
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Oil for frying

For Hot Spice Oil:

  • 1/2 cup frying oil
  • 1 tablespoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar

Instructions
 

Marinate the Chicken

  • Place chicken in buttermilk with salt and pepper. Rest for at least 30 minutes.

Prepare the Flour Mix

  • Mix flour, cornstarch, paprika, garlic powder and onion powder in a bowl.

Coat the Chicken

  • Remove chicken from buttermilk. Coat well in flour mixture. Press coating firmly.

Heat the Oil

  • Heat oil in a deep pan to 350°F. Oil should be hot, not smoking.

Fry the Chicken

  • Fry chicken pieces until golden and crispy. Cook about 6-8 minutes per side.

Drain the Chicken

  • Remove chicken and place on paper towels. Let extra oil drain off.

Make the Hot Oil

  • Heat oil gently. Mix in cayenne, chili powder, paprika and brown sugar.

Brush the Chicken

  • Brush hot spice oil over fried chicken evenly. Adjust amount for heat level.

Rest and Serve

  • Let chicken rest for five minutes. Serve hot and crispy.
