Ingredients

  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups milk whole or 2%
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika optional
  • ½ cup breadcrumbs optional topping

Instructions

Cook the Pasta

  • Boil water in a large pot. Add a pinch of salt. Cook macaroni until soft but firm. Drain and set aside.

Make the Cheese Sauce

  • Melt butter in a saucepan over medium heat. Add flour and whisk 1–2 minutes. Slowly pour in milk while stirring. Cook until sauce thickens.

Add Cheese

  • Lower heat and add cheddar and mozzarella. Stir until cheese melts completely. Add salt, pepper, and paprika. Mix well.

Combine Pasta and Sauce

  • Add cooked pasta to cheese sauce. Stir until pasta is fully coated.

Optional Baking

  • Preheat oven to 350°F (175°C). Pour pasta into baking dish. Sprinkle breadcrumbs on top. Bake 15–20 minutes until golden.

Serve the Mac and Cheese

  • Remove from oven if baked. Serve hot in bowls. Enjoy creamy, cheesy goodness.

Notes

  • Use fresh cheese for a rich flavor.
  • Stir sauce constantly to avoid lumps.
  • Don’t overcook pasta; it cooks more in sauce.
  • Add a pinch of paprika for extra taste.
  • Bake with breadcrumbs for a crunchy top.
