Ingredients
  

  • 2 cooked chicken breasts grilled or shredded
  • 4 cups chopped lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced almonds
  • 1/2 cup crispy chow mein noodles
  • 2 green onions chopped
  • 1/4 cup cilantro leaves

For the dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • A little salt and pepper

Instructions
 

Cook the Chicken

  • Grill or cook the chicken until golden. Let it cool, then slice it into small pieces. You can also use leftover chicken.

Make the Dressing

  • Take a small bowl. Add rice vinegar, soy sauce, honey, sesame oil, olive oil, ginger, and garlic. Mix them well. Add salt and pepper as you like.

Prepare the Veggies

  • Cut the lettuce and green onions. Shred the cabbage and carrots. Keep all the veggies fresh and crispy.

Mix the Salad

  • Take a big bowl. Add lettuce, cabbage, carrots, green onions, and cilantro. Mix them gently.

Add the Chicken

  • Add the sliced chicken to the bowl. Pour the dressing on top. Mix everything again until the salad is covered in dressing.

Add Crunchy Toppings

  • Put chow mein noodles and almonds on top. They make the salad extra crunchy and tasty.

Serve and Enjoy

  • Serve the salad in bowls. You can add more dressing if you want. Eat it fresh and enjoy!
