This Canh Bun Recipe is simple and easy to try. You only need noodles, broth, and fresh herbs. The soup feels light but also filling and hearty.

Ingredients
  

  • Rice noodles – 1 pack medium thick
  • Crab paste – 3 tablespoons
  • Pork bones – 1 pound
  • Shrimp paste – 1 teaspoon
  • Annatto oil – 2 tablespoons
  • Tomato – 2 large cut into wedges
  • Water spinach – 1 bunch
  • Tofu – 1 block fried and cut
  • Green onions – 3 stalks
  • Fish sauce – 2 tablespoons
  • Salt – 1 teaspoon
  • Sugar – 1 teaspoon
  • Water – 8 cups

Instructions
 

Prepare the Broth

  • Add pork bones to water in a pot.
  • Boil and simmer for 30 minutes to make broth.

Cook the Tomatoes

  • Heat oil in a pan.
  • Add annatto oil and tomatoes.
  • Cook until soft, then add shrimp paste.

Mix in Crab Paste

  • Add crab paste to the pan.
  • Stir well until it smells fragrant.

Combine into Broth

  • Pour the crab and tomato mix into broth.
  • Season with fish sauce, sugar, and salt.

Cook the Noodles

  • Boil rice noodles in a separate pot.
  • Drain noodles and keep aside.

Prepare Greens and Tofu

  • Wash water spinach and cut into short pieces.
  • Slice fried tofu if not already cut.

Assemble the Bowl

  • Place noodles in a bowl.
  • Add tofu and water spinach.
  • Pour hot broth with crab paste and tomatoes.
  • Top with green onions for garnish.

Serve Hot

  • Enjoy Canh Bun while it is warm.
  • Serve with lime wedges or chili.

Notes

  • Use fresh crab paste for the best taste.
  • Annatto oil gives a bright, red color.
  • Simmer pork bones longer for strong flavor.
  • Do not overcook the noodles.
  • Add fresh herbs just before serving.
