Ingredients
  

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • 1 cup warm water about 110°F / 45°C
  • 1 teaspoon olive oil optional

Instructions
 

Activate Yeast

  • Mix warm water and yeast in a bowl. Let sit 5–10 minutes until frothy and bubbly.

Combine Flours and Salt

  • In a large bowl, mix whole wheat flour, all-purpose flour and salt evenly.

Add Water and Yeast

  • Pour the yeast mixture into the flour. Stir until dough starts to form a sticky ball.

Knead the Dough

  • Turn dough onto a floured surface. Knead 8–10 minutes until smooth and elastic.

First Rise

  • Place dough in a lightly oiled bowl. Cover with a towel and let it rise for 1 hour.

Shape the Bread

  • Punch down dough and shape into a round or oval loaf. Place on a baking sheet.

Second Rise

  • Cover dough with a towel again. Let rise 20–30 minutes until slightly puffed.

Preheat Oven

  • Preheat oven to 375°F (190°C) while dough rises.

Bake the Bread

  • Bake for 25 minutes until golden brown. Tap the bottom; it should sound hollow.

Cool and Serve

  • Remove from oven and cool on a wire rack for 10–15 minutes. Slice and enjoy.
