Ingredients

  • 2 pounds baby potatoes halved
  • 3 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tbsp fresh rosemary chopped
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

Prepare the Potatoes

  • Wash and cut the potatoes in half. Dry well so they roast nicely and get crisp.

Mix the Mustard Sauce

  • Combine Dijon mustard, whole grain mustard, olive oil, garlic, rosemary, salt, and pepper in a bowl.

Coat the Potatoes

  • Add the potatoes to the bowl. Toss well until each piece is fully covered in the mustard mix.

Spread on Baking Sheet

  • Place the coated potatoes on a baking sheet. Keep them in a single layer for even roasting.

Roast the Potatoes

  • Bake the potatoes at 400°F for 50 minutes. Stir halfway for perfect golden color and crisp edges.

Check Doneness

  • Pierce with a fork. If soft inside and crisp outside, they are fully ready to enjoy.

Serve Warm

  • Serve the potatoes hot. Add extra rosemary or fresh herbs for a beautiful and tasty finish.

Notes

  • Use baby potatoes for best results.
  • Dry the potatoes before mixing.
  • Do not skip whole grain mustard for texture.
  • Spread potatoes in a single layer.
  • Stir halfway for extra crisp edges.
  • Serve immediately for best taste.
