Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup cooked chicken shredded
  • cups egg noodles
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions
 

Prepare the Vegetables

  • Chop the onion, carrots, and celery. Mince the garlic. Keep them ready. Fresh veggies make the soup taste better.

Cook the Veggies

  • Heat olive oil in a big pot on medium heat. Add onions, carrots, and celery. Stir and cook for 5 minutes until soft. Add garlic and cook for 1 more minute. This step makes the soup smell and taste great.

Add Broth and Spices

  • Pour in the chicken broth. Add salt, pepper, thyme, and bay leaf. Mix well. Let it come to a small boil.

Add Noodles

  • Add egg noodles to the soup. Stir often so they don’t stick. Cook for 8–10 minutes until noodles are soft.

Add Chicken

  • Add the cooked chicken to the pot. Stir and lower the heat. Let it cook for 10 more minutes so the flavors mix.

Taste and Adjust

  • Taste the soup. Add more salt or pepper if needed. If it’s too thick, add a little more broth.

Serve the Soup
