Ingredients
  

Crust:

  • Graham crackers crushed – 1 1/2 cups
  • Unsalted butter melted – 1/4 cup
  • Sugar – 2 tablespoons
  • Red Velvet Layer:
  • All-purpose flour – 1 1/4 cups
  • Cocoa powder – 2 tablespoons
  • Baking powder – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Buttermilk – 1/2 cup
  • Vegetable oil – 1/2 cup
  • Granulated sugar – 1 cup
  • Eggs – 2 large
  • Red food coloring – 2 tablespoons
  • Vanilla extract – 1 teaspoon

Cheesecake Layer:

  • Cream cheese softened – 16 oz
  • Granulated sugar – 1/2 cup
  • Eggs – 2 large
  • Heavy cream – 1/4 cup
  • Vanilla extract – 1 teaspoon

Decoration:

  • Whipped cream – 1 cup
  • Pastel-colored sprinkles – 1/4 cup

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and set aside.

Prepare the Crust

  • Mix crushed graham crackers, melted butter and sugar. Press evenly into pan bottom. Bake 10 minutes.

Mix Red Velvet Ingredients

  • In a bowl, mix flour, cocoa, baking powder and salt. Set aside.

Combine Wet Ingredients

  • In another bowl, whisk buttermilk, oil, sugar, eggs, food coloring and vanilla until smooth.

Make Red Velvet Batter

  • Gradually add dry ingredients to wet. Mix gently until fully combined. Pour over baked crust.

Bake Red Velvet Layer

  • Bake red velvet layer for 20 minutes. Remove and cool slightly while preparing cheesecake layer.

Prepare Cheesecake Filling

  • Beat cream cheese and sugar until creamy. Add eggs, heavy cream, and vanilla. Mix until smooth.

Add Cheesecake Layer

  • Pour cheesecake filling over cooled red velvet layer. Smooth top with spatula carefully.

Bake Complete Cheesecake

  • Bake for 30 minutes at 325°F (165°C). Center should be slightly jiggly but set. Cool completely.

Decorate Cheesecake

  • Top with whipped cream and pastel sprinkles. Optional: swirl light pastel colors into cheesecake before baking.
