Ingredients
  

  • 2 cans tuna drained
  • 1 can garbanzo beans drained and rinsed
  • 1 small red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon dried oregano
  • Fresh parsley chopped

Instructions
 

Prepare the Beans

  • Drain and rinse garbanzo beans well. Shake off extra water before adding to bowl.

Add the Tuna

  • Open tuna cans. Drain liquid fully. Flake tuna gently with a fork.

Chop the Vegetables

  • Chop onion, tomatoes, cucumber and parsley into small even pieces for best texture.

Combine Main Ingredients

  • Add tuna, beans and vegetables to a large mixing bowl. Mix gently.

Make the Dressing

  • In a small bowl, mix olive oil, lemon juice, salt, pepper and oregano well.

Add Dressing

  • Pour dressing over salad. Toss gently until everything is evenly coated.

Taste and Adjust

  • Taste salad. Add more salt, lemon juice or pepper if needed.

Chill or Serve

  • Serve immediately or chill for 15 minutes for better flavor.
