Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup buttermilk
  • 1 cup flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper optional for spice
  • Oil for frying canola or vegetable oil

Prepare the Chicken

  • Wash and dry the chicken. Cut it into even pieces so it cooks evenly.

Marinate the Chicken

  • Pour buttermilk into a bowl. Add some salt and pepper. Put the chicken in and rest it for 30 minutes. This makes it soft and tasty.

Make the Coating

  • Mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper in another bowl. This mix gives a crunchy outside.

Coat the Chicken

  • Take chicken from the buttermilk. Dip it in the flour mix. Press gently so it sticks well. Put it on a plate and rest for 5 minutes. This helps the coating stay firm.

Heat the Oil

  • Pour oil into a deep pan. Heat to 350°F (175°C). Check with a wooden spoon—bubbles mean it’s ready.

Fry the Chicken

  • Put chicken pieces into the hot oil. Do not put too many at once. Fry 6–7 minutes on each side until golden brown. The inside should reach 165°F (74°C).

Drain and Rest
