Ingredients
  

  • 10 pounds live crawfish
  • 1 pound smoked sausage cut in pieces
  • 6 corn ears cut in half
  • 10 small red potatoes
  • 2 lemons cut in half
  • 1 cup Cajun seasoning Slap Ya Mama or Stalekracker mix
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 2 bay leaves
  • 1 stick butter
  • 1 onion peeled and halved
  • 1 head garlic cut in half
  • Optional: hot sauce for extra spice

Instructions
 

Clean the Crawfish

  • Wash the crawfish under cold water. Remove dirt or small trash. Soak for a few minutes, then rinse again. Clean crawfish taste much better.

Boil the Water

  • Fill your pot halfway with water. Add Cajun seasoning, garlic powder, onion powder, bay leaves, butter, lemons, onion, and garlic. Let the water boil. It will start smelling amazing!

Cook the Vegetables

  • Add potatoes to the boiling water. Cook for 10 minutes. Then add corn and sausage. Cook for another 5 minutes. The veggies and sausage will soak up the spices.

Add the Crawfish

  • Now add the crawfish into the pot. Stir them well with a long spoon. Boil for about 5 to 7 minutes. The crawfish will turn bright red when ready.

Let Them Soak

  • Turn off the heat. Let the crawfish stay in the water for 15–20 minutes. This helps them absorb all the seasoning. The longer you soak, the stronger the flavor.

Drain and Serve

  • Drain all the water. Pour the crawfish, corn, sausage, and potatoes on a big tray or table covered with paper. Serve hot with butter and lemon.

  • Always clean crawfish before cooking.

  • Don’t boil too long or crawfish get tough.
