Ingredients
  

  • 6 large eggs
  • 1 cup milk
  • 2 cups fresh spinach chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers any color
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika optional
  • 1 tbsp olive oil or butter for greasing dish

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish with olive oil or butter.

Prepare Vegetables

  • Wash and chop spinach. Dice onions and bell peppers. Set aside for mixing.

Mix Eggs and Milk

  • In a large bowl, whisk eggs and milk until smooth. Add salt, pepper, and garlic powder.

Combine Vegetables and Cheese

  • Add chopped spinach, onions, bell peppers and shredded cheese into the egg mixture. Mix gently.

Pour into Baking Dish

  • Pour the egg and vegetable mixture evenly into the prepared baking dish. Smooth the top.

Bake the Casserole

  • Place dish in preheated oven. Bake uncovered for 30-35 minutes until set and lightly golden on top.

Check for Doneness

  • Insert a toothpick in the center. If it comes out clean, the casserole is ready.

Cool Slightly

  • Remove from oven. Let it cool for 5 minutes before slicing to serve.

Serve and Enjoy

  • Cut into squares and serve warm. Optionally, garnish with fresh herbs or extra cheese.
