Ingredients
  

  • 2 cans 15 oz each black beans, drained and rinsed
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 1 cup vegetable broth
  • 1 cup water
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 jalapeño chopped (optional)
  • Juice of ½ lime
  • Fresh cilantro for garnish

Instructions
 

Heat the Oil

  • Warm olive oil in a large pot over medium heat until lightly shimmering and ready.

Cook the Onion

  • Add chopped onion and cook until soft and golden. Stir often to avoid burning.

Add the Garlic

  • Add minced garlic and cook for 30 seconds. Stir well to release strong, rich flavor.

Add Spices

  • Add chili powder, cumin, paprika, salt and pepper. Stir until spices coat the onions well.

Add Beans

  • Pour in the black beans. Mix gently to coat beans with the warm spice mixture.

Add Broth

  • Add vegetable broth and water. Stir gently and bring everything to a steady simmer.

Cook the Soup

  • Let the soup simmer for 10–12 minutes. This helps flavors blend together quickly and deeply.

Blend the Soup

  • Blend half the soup for a thick texture. Keep the rest chunky for a balanced feel.

Add Lime Juice

  • Stir in fresh lime juice to brighten the soup and boost the flavor nicely.

Serve and Enjoy

  • Top with cilantro. Serve warm with bread, chips or rice for a full, comforting meal.
