Ingredients

  • 1 pound fresh spinach washed and trimmed
  • 3 tablespoons unsalted butter
  • 2 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • ½ cup shredded Gruyere cheese
  • ¼ cup breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg optional
  • 2 tablespoons lemon juice

Instructions

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease a baking dish lightly. This ensures spinach bakes evenly and does not stick.

Cook the Spinach

  • In a large skillet, melt butter over medium heat. Add garlic and sauté for one minute. Add spinach and cook until wilted, stirring occasionally.

Season the Spinach

  • Add salt, pepper and nutmeg to the spinach. Stir well. Cook for 2–3 minutes until fully combined. The flavors should blend into the spinach.

Add Lemon and Cheese

  • Remove skillet from heat. Stir in lemon juice and half of the Parmesan and Gruyere cheese. Mix until evenly combined. This makes the spinach creamy and flavorful.

Prepare the Topping

  • In a small bowl, mix breadcrumbs with the remaining Parmesan cheese. Sprinkle lightly over the spinach in the baking dish. This creates a crunchy topping.

Bake the Spinach

  • Place the baking dish in the preheated oven. Bake for 10–15 minutes until cheese melts and breadcrumbs turn golden. Keep an eye to avoid burning.

Serve Warm

  • Remove from oven and let it sit for a couple of minutes. Serve immediately while warm. The melted cheese and crispy topping are best enjoyed fresh.

Notes

  • Use fresh spinach for the best flavor and texture.
  • Do not overcook the spinach to keep it bright green.
  • Mix half the cheese into spinach for creaminess, half on top for crunch.
  • Add a pinch of nutmeg to enhance flavor.
  • Serve immediately for the best texture contrast.
