Ingredients
  

  • 3 large carrots chopped
  • 2 potatoes diced
  • 1 sweet potato diced
  • 1 onion chopped
  • 4 garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 cup water

Instructions
 

Prepare the Veggies

  • Chop all vegetables and place them on a baking sheet so they roast evenly and cook at the same speed.

Add the Garlic

  • Add whole garlic cloves. They will roast and become soft, bringing warm and deep flavor to the soup.
