Ingredients
  

For the dough:

  • 2 cups all-purpose flour
  • 2 eggs
  • 1 tbsp olive oil
  • Pinch of salt

For the filling (example – ricotta and spinach):

  • 1 cup ricotta cheese
  • ½ cup cooked spinach chopped
  • 2 tbsp grated parmesan
  • Pinch of salt and pepper

For cooking:

  • Water with salt
  • Tomato sauce or butter sauce for topping

Instructions
 

Make the dough

  • Mix flour and salt in a bowl.
  • Add eggs and olive oil.
  • Knead until smooth and soft.
  • Let it rest for 20 minutes.

Prepare the filling

  • Mix ricotta, spinach, parmesan, salt, and pepper.
  • Keep filling in a bowl until needed.

Roll out the dough

  • Cut dough in half.
  • Roll into thin sheets with rolling pin.

Shape the ravioli

  • Place small spoonfuls of filling on one sheet.
  • Cover with the other sheet.
  • Press around filling and cut squares.
  • Seal edges with fork.

Cook the ravioli

  • Boil water with salt in a pot.
  • Add ravioli and cook for 3–4 minutes.
  • They float when ready.

Serve with sauce

  • Drain ravioli with slotted spoon.
  • Serve with tomato sauce or butter sauce.

Notes

  • Roll dough thin for soft ravioli.
  • Seal edges well so filling does not leak.
  • Do not overfill each piece.
  • Use fresh ingredients for best taste.
  • Cook only a few minutes to keep soft.
