Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg optional
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1/2 cup crushed pineapple drained
  • 1 cup chopped walnuts optional
  • 1 cup shredded coconut optional

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions
 

Preheat the Oven

  • Set oven to 350°F. Grease two 9-inch pans. Line with parchment paper for easy release.

Mix Dry Ingredients

  • In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk to blend.

Beat Eggs and Sugars

  • In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth.

Add Oil and Vanilla

  • Pour in vegetable oil and vanilla extract. Mix until fully combined and smooth.

Combine Dry and Wet

  • Gradually add dry ingredients to wet. Stir gently until no flour streaks remain.

Add Carrots and Pineapple

  • Fold in grated carrots and crushed pineapple. Mix carefully to keep batter light.

Add Nuts and Coconut

  • Fold in walnuts and shredded coconut if using. Ensure even distribution in the batter.

Pour Batter into Pans

  • Divide batter evenly into prepared pans. Smooth tops with a spatula for even baking.

Bake the Cake

  • Bake for 30–35 minutes or until a toothpick comes out clean. Do not overbake.

Cool the Cake

  • Remove from oven and cool 10 minutes in pans. Transfer to a wire rack to cool completely.

Make the Frosting

  • Beat cream cheese and butter until creamy. Add powdered sugar and vanilla. Mix until smooth.

Frost the Cake

  • Place one cake layer on plate. Spread frosting evenly. Place second layer and frost top and sides.

Decorate as Desired

  • Sprinkle extra nuts or coconut on top for decoration. You can also leave it simple.

Chill Before Serving

  • Refrigerate for 30 minutes to set frosting. Slice with a sharp knife before serving.

  • Drain pineapple well to avoid soggy cake.
