Ingredients
  

  • 1 cup butter soft
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup shredded coconut
  • 1 cup white chocolate chips
  • 1/2 cup chopped macadamia nuts

Instructions
 

Preheat the Oven

  • Set the oven to 350°F (175°C). Place parchment paper on the baking sheet. This helps the cookies bake evenly.

Mix the Wet Ingredients

  • In a large bowl, beat the butter until soft and smooth. Add white and brown sugar. Mix until fluffy. Add eggs one at a time. Then add vanilla and mix again.

Mix the Dry Ingredients

  • In another bowl, mix flour, baking soda, and salt. Add this slowly to the butter mix. Stir until everything blends well.

Add the Extra Ingredients

  • Add coconut, white chocolate chips, and macadamia nuts. Mix gently with a spatula. Make sure every scoop has a mix of all ingredients.

Shape the Cookies

  • Take small scoops of dough and roll them into balls. Place them on the baking sheet. Leave space between each cookie.

Bake and Cool

  • Bake for 10 to 12 minutes until the edges are golden. Let the cookies cool on the sheet for a few minutes. Then move them to a rack to cool fully.

Notes

  • Use soft butter for easy mixing.
  • Do not overmix the dough. It keeps cookies soft.
  • Toast coconut for extra flavor.
  • Add a pinch of salt on top before baking.
  • If the dough is too soft, chill it for 15 minutes.
