Prickly pear ice cream is sweet, fruity and perfect for hot days. This prickly pear ice cream recipe is easy to make at home. You don’t need fancy tools or hard-to-find ingredients.

Ingredients
  

  • 2 cups prickly pear juice about 4–5 prickly pears
  • 1 cup heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: few drops of pink food coloring for brighter color

Instructions
 

Prepare Prickly Pear Juice

  • Peel prickly pears carefully. Blend the fruit and strain seeds. Keep juice for ice cream.

Mix Milk and Sugar

  • In a saucepan, add milk and sugar. Heat gently until sugar dissolves.

Add Cream and Vanilla

  • Stir in heavy cream and vanilla extract. Heat just until warm.

Combine Juice and Cream Mixture

  • Pour prickly pear juice into the cream mix. Whisk well until smooth.

Cool the Mixture

  • Let mixture cool to room temperature. Then chill in fridge for 1–2 hours.

Churn the Ice Cream

  • Pour mixture into ice cream maker. Churn according to machine instructions.

Freeze the Ice Cream

  • Transfer churned ice cream to freezer container. Freeze at least 4 hours.

Serve and Enjoy

  • Scoop ice cream into bowls or cones. Enjoy the fruity flavor!

  • Always strain juice to remove seeds.
  • Use fresh prickly pears for the best flavor.
