Ingredients

  • 1 lb pork chunks
  • 3 cups diced squash
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 cup chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp dried thyme

Instructions

Prepare the Pork

  • Cut the pork into small chunks. Remove extra fat pieces to make the dish lighter and easier.

Season the Pork

  • Sprinkle salt, pepper, and paprika on the pork. Mix well so each piece gets covered with seasoning.

Heat the Oil

  • Place a large skillet on medium heat. Add olive oil and let it warm for a minute.

Brown the Pork

  • Add the pork chunks to the skillet. Cook until they turn brown on all sides for rich flavor.

Add the Onion

  • Stir in the chopped onion. Cook until it turns soft and gives a sweet smell to the dish.

Add the Garlic

  • Add minced garlic and stir well. Cook for one minute so the garlic does not burn.

Add the Squash

  • Add diced squash to the skillet. Mix everything to coat the squash with pork juices.

Pour the Broth

  • Pour in chicken broth slowly. The broth helps cook the squash and makes the dish tender.

Add Soy Sauce

  • Add soy sauce for extra depth and rich color. It boosts the flavor without making it heavy.

Add Lemon Juice

  • Add lemon juice for a fresh taste. It balances the sweetness of the squash.

Sprinkle Thyme

  • Add dried thyme for a warm and earthy taste. Stir gently to spread the spice well.

Simmer the Dish

  • Cover the skillet and let it simmer. Cook until pork is soft and squash turns tender.

Notes

  • Use fresh squash for better taste and texture.
  • Cut pork pieces evenly so they cook at the same time.
  • Brown the pork well for deeper flavor.
  • Do not overcook the squash to keep it firm and pleasant.
  • Add a little chili if you like a spicy taste.
