Ingredients
  

  • Ground beef – 1½ pounds
  • Onion – 1 medium chopped
  • Garlic – 2 cloves minced
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Paprika – 1 teaspoon
  • Cream of mushroom soup – 1 can 10.5 ounces
  • Sour cream – ½ cup
  • Whole corn – 1 can 15 ounces, drained
  • Cheddar cheese – 2 cups shredded
  • Frozen tater tots – 1 bag 32 ounces
  • Olive oil – 1 tablespoon

Instructions
 

Preheat the Oven

  • Heat oven to 375°F. Lightly grease a baking dish to stop sticking.

Cook the Beef

  • Heat oil in a skillet. Add beef and onion. Cook until beef browns fully.

Add Garlic and Seasoning

  • Add garlic, salt, pepper and paprika. Stir well and cook one minute more.

Mix Creamy Ingredients

  • Add soup and sour cream. Stir until smooth and creamy.

Add Corn

  • Stir in drained corn. Mix gently to spread evenly.

Add Cheese

  • Add one cup cheese. Stir until melted and mixed well.

Transfer to Baking Dish

  • Pour mixture into baking dish. Spread evenly with a spoon.

Add Tater Tots

  • Arrange frozen tater tots on top in even rows.

Bake Covered

  • Cover with foil. Bake for twenty minutes to heat through.

Uncover and Finish

  • Remove foil. Sprinkle remaining cheese. Bake twenty more minutes until golden and bubbly.

Notes

  • Use fresh ground beef
  • Season beef well
  • Drain excess grease
  • Spread tater tots evenly
  • Let casserole rest before serving
