Ingredients
  

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 1 pound smoked sausage sliced
  • 1 pound chicken thighs boneless, skinless, cut into pieces
  • 4 cups chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 cup okra sliced
  • Cooked white rice for serving
  • Chopped green onions and parsley for garnish

Instructions
 

Make the Roux

  • In a large Dutch oven, heat oil over medium heat. Add flour gradually, stirring constantly until dark brown, about 10 minutes.

Cook Vegetables

  • Add chopped onion, bell pepper and celery to the roux. Cook for 5 minutes until softened, stirring often to prevent sticking.

Add Garlic and Sausage

  • Stir in minced garlic and sliced sausage. Cook 3–4 minutes until fragrant and sausage releases its flavor into the mixture.

Add Chicken

  • Add chicken pieces to the pot. Stir to coat with roux and vegetables. Cook for 5 minutes until lightly browned on all sides.

Add Liquids and Seasoning

  • Pour in chicken broth and diced tomatoes. Stir in Cajun seasoning, thyme, bay leaves, salt and pepper. Bring to a gentle simmer.

Simmer the Gumbo

  • Cover and simmer for 45 minutes over low heat, stirring occasionally. Chicken becomes tender and flavors combine beautifully.

Add Okra

  • Add sliced okra to the gumbo and cook for another 10 minutes. Okra thickens the gumbo slightly and adds classic flavor.

Serve

  • Serve gumbo hot over cooked white rice. Garnish with chopped green onions and parsley. Enjoy a rich, comforting bowl of Southern goodness.
