Ingredients
  

  • Smoked sausage – 1 pound sliced
  • Chicken thighs – 1 pound cut in chunks
  • Onion – 1 large chopped
  • Bell peppers – 2 chopped
  • Celery – 2 stalks chopped
  • Garlic – 4 cloves minced
  • Cajun seasoning – 3 tablespoons
  • Chicken broth – 6 cups
  • Pasta penne or rigatoni – 1 pound
  • Olive oil – 2 tablespoons
  • Green onions – for garnish
  • Salt – to taste
  • Black pepper – to taste

Instructions
 

Cook Sausage

  • Heat oil in big pot. Brown sliced sausage.

Add Chicken

  • Add chicken chunks. Cook until golden brown.

Add Veggies

  • Stir in onion, peppers, celery, and garlic. Cook soft.

Season Well

  • Add Cajun seasoning, salt, and pepper. Stir to coat.

Pour Broth

  • Add chicken broth and bring to boil.

Add Pasta

  • Put pasta in boiling broth. Stir often.

Cook Together

  • Let pasta cook until tender and broth thick.

Finish and Serve

  • Top with green onions. Serve hot and enjoy.

Notes

  • Use smoked sausage for bold Cajun taste.
