Ingredients
  

  • 1 cup soy sauce
  • 1/2 cup mirin sweet rice wine
  • 1/4 cup sake
  • 2 tablespoons brown sugar
  • 1 small piece of kombu dried kelp
  • 1/4 cup bonito flakes optional for more flavor

Instructions
 

Heat the Sauce Base

  • Put soy sauce, mirin, and sake in a small pot. Heat it on medium and stir gently.

Add Sugar and Kombu

  • Add brown sugar and the kombu piece. Mix well until the sugar melts. The kombu gives a deep, rich taste.

Simmer the Sauce

  • Let the sauce bubble gently for 5 minutes. This helps mix all the flavors together.

Add Bonito Flakes

  • Turn off the heat. Add bonito flakes to the hot sauce. Let them soak for 5 minutes. They add a smoky flavor.

Strain the Sauce

  • Use a strainer to remove the kombu and bonito flakes. The sauce should be smooth and dark.

Cool and Store

  • Let the sauce cool fully. Pour it into a glass jar or bottle. Keep it in the fridge for up to two weeks.

Notes

  • Use good soy sauce for better taste.
  • Do not cook it for too long.
  • If you don’t have sake, use water instead.
  • Add a little garlic or ginger for extra flavor.
  • Taste it before cooling and change sweetness if needed.
