Ingredients
  

For the crust:

  • 1 1/2 cups crushed oatmeal cookies
  • 1/4 cup melted butter
  • 2 tablespoons brown sugar

For the filling:

  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter melted
  • 3 egg yolks
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

Prepare the Crust

  • Preheat your oven to 175°C (350°F). Mix crushed oatmeal cookies, melted butter and brown sugar in a bowl. Stir until the mixture looks like wet sand and sticks together easily.

Press the Crust into the Pan

  • Place the crumb mixture into a pie pan. Press firmly across the bottom and sides. Use a spoon or glass to flatten evenly. Bake the crust for 10 minutes.

Make the Pie Filling

  • In a large bowl, combine granulated sugar and brown sugar. Add melted butter and mix well. Stir in egg yolks slowly. Then add cream, vanilla, and salt. Mix until smooth.

Pour Filling into the Crust

  • Remove the crust from the oven and let it cool slightly. Pour the filling mixture into the crust carefully. Spread evenly using a spatula so the top becomes smooth.

Bake the Pie

  • Place the pie back into the oven at 175°C (350°F). Bake for about 35 minutes. The edges should set while the center stays slightly soft and creamy.

Cool the Pie

  • Remove the pie from the oven and let it cool at room temperature. Then place it in the refrigerator for at least two hours so the filling sets properly.

Slice and Serve

  • Once chilled, cut the pie into slices using a sharp knife. Serve cold or slightly cool. Sprinkle powdered sugar on top for a beautiful finish.
