Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup beer lager or ale works
  • 1 cup whole milk
  • 2 cups cheddar cheese shredded
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions
 

Melt the Butter

  • Heat a saucepan on medium. Add butter and let it melt.

Make the Roux

  • Add flour to butter. Stir until smooth. This thickens the sauce.

Add Beer Slowly

  • Pour beer in slowly. Whisk to stop lumps.

Add Milk

  • Add milk. Stir until it turns creamy.
  • Season the Sauce
  • Add mustard, garlic, and onion powder. Stir well.

Add Cheese Gradually

  • Turn heat low. Add cheese in small amounts. Stir until melted.

Taste and Adjust

  • Add salt and pepper. Taste and change flavor if needed.

Serve Warm

  • Pour into a bowl. Eat hot with bread or pretzels.
