Ingredients
  

For Pastry:

  • 1 ¼ cups all-purpose flour
  • ½ cup cold butter cubed
  • 2 tablespoons sugar
  • 1 egg yolk
  • 2 –3 tablespoons cold water

For Filling:

  • ½ cup raspberry jam
  • ½ cup butter softened
  • ½ cup sugar
  • 2 large eggs
  • 1 cup ground almonds
  • 1 teaspoon almond extract
  • 2 tablespoons flour

For Topping:

  • Flaked almonds for decoration
  • Powdered sugar optional

Instructions
 

Prepare the Pastry

  • Mix flour, butter and sugar in a bowl. Rub with fingers until crumbly. Add egg yolk and water slowly. Form a soft dough and chill for 15 minutes.

Roll the Dough

  • Roll out chilled dough on a floured surface. Place it into a tart tin. Press gently into edges. Trim extra dough and prick the base with a fork.

Blind Bake the Base

  • Place baking paper over pastry. Add baking beans on top. Bake at 350°F (175°C) for 15 minutes. Remove beans and bake for 5 more minutes.

Add Jam Layer

  • Spread raspberry jam evenly over the baked pastry base. Make sure the layer is smooth and covers the entire bottom.

Prepare Almond Filling

  • In a bowl, beat butter and sugar until creamy. Add eggs one by one. Mix in ground almonds, almond extract and flour until smooth.

Fill the Tart

  • Pour almond filling over the jam layer. Spread evenly using a spatula. Tap gently to remove air bubbles for even baking.

Add Almond Topping

  • Sprinkle flaked almonds on top. This adds crunch and a beautiful golden finish after baking.

Bake the Tart

  • Bake at 350°F (175°C) for 30–35 minutes. The top should be golden brown. The filling should feel firm but soft inside.

Cool and Serve

  • Let the tart cool completely before slicing. Dust with powdered sugar if you like. Serve and enjoy.
