Ingredients

  • 1 prepared pie crust
  • 3 large ripe tomatoes sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated cheddar cheese
  • 1/3 cup mayonnaise
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

Preheat the Oven

  • Preheat your oven to 180°C (350°F). This helps the pie cook evenly. Place the rack in the center of the oven for best baking results.

Prepare the Tomatoes

  • Slice the tomatoes into thin rounds. Place them on paper towels for a few minutes. This removes extra moisture and keeps the pie crust crisp.

Prepare the Pie Crust

  • Place the prepared pie crust in the pie dish. Press it gently into the bottom and sides. Use a fork to prick the crust lightly.

Pre-Bake the Crust

  • Bake the crust for about 8 minutes at 180°C (350°F). This step keeps the crust from becoming soggy after adding the filling.

Mix the Cheese Filling

  • In a mixing bowl, combine mozzarella cheese, cheddar cheese and mayonnaise. Stir until the mixture becomes creamy and smooth. This will be the rich topping.

Layer the Tomatoes

  • Arrange the tomato slices evenly over the crust. Sprinkle salt, pepper and chopped basil over the tomatoes. This adds fresh flavor to the pie.

Add the Cheese Mixture

  • Spread the cheese and mayonnaise mixture over the tomatoes. Use a spatula to cover them evenly. The topping will melt and form a creamy layer.

Bake the Pie

  • Place the pie in the oven. Bake for about 25 minutes at 180°C (350°F). The cheese should melt and become lightly golden.

Cool Before Serving

  • Remove the pie from the oven and allow it to cool for 10 minutes. Cooling helps the slices hold their shape when cutting.

Notes

  • Use ripe and fresh tomatoes for the best flavor.
  • Drain tomato slices to remove extra water.
  • Pre-bake the crust to keep it crispy.
  • Use fresh basil for better taste.
  • Let the pie cool before slicing.
