Ingredients

  • 2 pie crusts homemade or store-bought
  • 8 cups apples peeled and sliced
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter cut into small pieces
  • 1 egg for egg wash

Instructions

Preheat the Oven

  • Preheat your oven to 375°F (190°C). This ensures even baking. Place a baking tray in the oven to catch any drips from the pie.

Prepare the Apples

  • Peel and slice the apples into thin pieces. Keep them even in size. This helps them cook evenly and gives a soft filling.

Mix the Filling

  • In a large bowl, combine apples, sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice and vanilla. Toss well until apples are fully coated.

Roll the Bottom Crust

  • Roll out one pie crust and place it into the pie dish. Press gently into the edges. Trim any extra dough hanging outside.

Add the Apple Filling

  • Pour the apple mixture into the crust. Pile it high in the center. This creates the “mile high” look after baking.

Add Butter Pieces

  • Place small pieces of butter on top of the apple filling. This adds richness and helps create a smooth, flavorful filling.

Cover with Top Crust

  • Roll out the second crust and place it over the filling. Seal the edges by pressing with fingers or a fork. Cut small slits on top.

Apply Egg Wash

  • Beat the egg and brush it over the top crust. This gives a golden color and shiny finish after baking.

Bake the Pie

  • Place the pie in the oven. Bake for 60–70 minutes. The crust should be golden, and the filling should bubble through the slits.

Cool Before Serving

  • Remove the pie and let it cool for at least 2 hours. This helps the filling set and makes slicing easier.

Notes

  • Use a mix of sweet and tart apples for better flavor
  • Slice apples thin for even cooking
  • Do not skip cooling time before slicing
  • Use cold butter for a flaky crust
  • Place foil under the pie to catch drips
  • Brush egg wash evenly for golden crust
