Ingredients

  • 2 cups elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ cup breadcrumbs optional for topping

Instructions

Cook the Pasta

  • Fill a large pot with water and add a pinch of salt. Bring it to a boil. Add macaroni and cook until tender. Drain the pasta using a colander.

Melt the Butter

  • Place a saucepan on medium heat. Add butter and let it melt slowly. Stir gently so the butter does not burn.

Make the Roux

  • Add flour to the melted butter. Whisk continuously for about two minutes. The mixture should become smooth and slightly thick.

Add Milk and Cream

  • Slowly pour in the milk and heavy cream while whisking. This helps prevent lumps. Continue stirring until the sauce becomes smooth and creamy.

Add Cheese

  • Add shredded cheddar and parmesan cheese to the sauce. Stir until the cheese melts completely. The sauce should become thick and rich.

Season the Sauce

  • Add salt, black pepper and paprika to the cheese sauce. Mix well so the flavors spread evenly throughout the sauce.

Combine Pasta and Sauce

  • Add the cooked macaroni to the cheese sauce. Stir gently until every piece of pasta is coated with the creamy cheese mixture.

Prepare for Baking

  • Preheat your oven to 375°F (190°C). Pour the macaroni mixture into a greased baking dish.

Add Topping and Bake

  • Sprinkle breadcrumbs evenly over the top. Place the dish in the oven and bake for about 20 minutes until the top becomes golden and slightly crispy.

Notes

  • Use freshly shredded cheese for better melting.
  • Do not overcook the pasta before baking.
  • Stir the sauce constantly to avoid lumps.
  • Use whole milk for a creamier texture.
  • Bake until the top becomes golden brown.
