Ingredients
  

  • 400 g mushrooms sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 3 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 tablespoon flour
  • 1 tablespoon parsley chopped

Instructions
 

Cook the Mushrooms

  • Heat butter and olive oil in a large pot over medium heat. Add sliced mushrooms and cook for 8 minutes. Stir often until soft and golden brown for rich flavor.

Add Onion and Garlic

  • Add chopped onion to the pot. Cook for 3 minutes until soft. Add garlic and cook for one more minute. Stir well to mix all the flavors together nicely.

Add Flour for Thickness

  • Sprinkle flour over the mushroom mixture. Stir well and cook for 2 minutes. This step helps the soup become slightly thick and smooth later.

Pour the Broth

  • Slowly add the broth into the pot. Stir continuously to avoid lumps. Add salt, pepper, and thyme. Let the soup cook for 10 minutes on low heat.

Blend for Smooth Texture

  • Turn off the heat and let the soup cool slightly. Use a blender to blend until smooth. You can also leave some chunks if you like texture.

Add Cream and Finish

  • Pour the soup back into the pot. Add heavy cream and mix well. Cook for 5 more minutes on low heat. Garnish with fresh parsley before serving.
