Ingredients
  

  • 1 cucumber diced
  • 2 tomatoes chopped
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 small red onion finely chopped
  • 1 cup lettuce chopped
  • 1/2 cup corn kernels
  • 1/2 cup black olives sliced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt to taste
  • Black pepper to taste

Instructions
 

Prepare the Vegetables

  • Wash all vegetables properly under clean water. Chop cucumber, tomatoes, peppers and lettuce into small pieces. Keep everything fresh and crisp for the best salad texture.

Cut the Onion

  • Finely chop the red onion into small pieces. Soak in cold water for five minutes. This reduces strong smell and makes it mild in taste.

Mix Vegetables Together

  • Take a large mixing bowl. Add all chopped vegetables, corn, and olives. Mix gently so the vegetables stay fresh and do not get mashed.

Prepare the Dressing

  • In a small bowl, add olive oil, lemon juice, honey, salt and pepper. Whisk well until dressing looks smooth and slightly thick.

Combine Salad and Dressing
